About the Role:
Cater Care Retail is currently looking for an experienced Sous Chef to join our multiple outlets in Cairns Airport!
- Sous Chef coverage at Cairns Airport/s managing the culinary operations of multiple cafes, bars & restaurants.
- Develop, enhance and create menus specifically catering to the high volume fast past environment of an Airport.
- Develop of a team of culinary professionals to support the Sous and Head Chef
- Ensure full compliance with the food safety program
- Oversee and manage the creation and delivery of menus inline with seasons and local events
Roster: Various days and hours (not FIFO)
What This Role Involves
- Overseeing multiple cafe, bar & restaurant kitchens, both production and a la carte
- Hands on role, providing coaching, mentoring & recruitment to the kitchen team. Also ordering, menu creation, costings and backend kitchen finances
- Adhering to food hygiene and safety practices and ensure full compliance
- Adhering to strict Airport security compliance
- Assisting the broader team as required
The Ideal Candidate Will Have:
- Minimum Certificate IV in Commercial Cookery
- Minimum 3+ years of experience as a Sous Chef in A La Carte cafe or restaurant
- Food Safety Supervisory Certification
- Experience in high volume, quick-service, a la carte and production cafe and restaurants
- Fantastic attitude with an ability to turn on a dime to deliver fresh, quality products to the travelling public.
- Good knowledge of menu costings, menu development and procurement.
- Food Safety Supervisor or FWHP (can be renewed on the job)
- The ability to stay calm under pressure
- Excellent verbal communication and a passion for customer service
- Ability to handle HR matters professionally and promptly
- Pride in personal appearance and hygiene
